I hope everyone had a great weekend (or is still having a great weekend, if you are off today)! We had a wonderful weekend with my birthday celebration part 2!

On Saturday, we spent the day at my in-laws. My mother-in-law made an AMAZING brunch for my birthday that included:

Everything was delicious and left us all stuffed, to say the least! When we got home that evening, my husband and I were still so full, that we just munched on a few carrots, a slice of turkey and some popcorn.

Yesterday, my husband planned a wonderful day of wine tasting with our friends in Amador County (while Keenan stayed with some friends). We started our day at Amador Cellars with some tasting and then a nice picnic with sandwiches and baked goods from Andrae’s Bakery. Everything was delicious, especially their yummy rosemary brie bread! If you are ever in the area, I highly recommend stopping at Andrae’s for lunch!

After lunch, we made our way to four wineries, including Vino Noceto (one of my favorites!), Story (a new favorite!), Convergence and Helwig (least favorite). It was such a beautiful (but cold!) day, that we were able to get some good pictures! On our way home, we picked up some pizzas and salads from Hot Italian in midtown Sacramento for dinner (a yummy way to end the day!). All in all, it was a great day and my husband did well! He planned the perfect birthday celebration. I’m so blessed and thankful for having such a loving and supportive husband!

Well, today, has been a “semi-lazy” day, since my husband has the day off (though, he isn’t feeling too well). Keenan had his last music class of the year this morning (we start again in January) and we stocked up on groceries on the way home.

After Keenan wakes up from his nap, we are going to CrossFit to complete “Murph,” a hero WOD that consists of: run 1 mile, 100 pullups, 200 pushups, 300 squats and run 1 mile. I’m SO not looking forward to it and trying to think of every excuse NOT to go.  But, I know my body needs a good workout, especially after consuming so many calories this weekend!

Keenan’s 2nd Birthday Party Recap August 28, 2012

Happy Monday! Was it me, or did the weekend go by way too fast? We had a great weekend: Celebrating Keenan’s birthday on Saturday with our family and friends, and on Sunday we had a reunion for our Bradley Method birth class. It was definitely a party weekend! Needless to say, we are all still recovering from the festivities (lack of sleep and too much good food!).

Keenan’s birthday party went very well. Keenan had a blast playing with all of his friends and everyone seemed to enjoy themselves. The party started at 3:30 p.m., and everyone pretty much left around 8:30 p.m. or so. Keenan had so much fun playing at his party, he immediately fell asleep as soon as I put him to bed around 9:00 p.m. He was exhausted, but just as I thought, he was up bright and early at 6:30 a.m. the next day, since he doesn’t sleep well at my parents’ house. I’m not sure why he doesn’t sleep well at my parents’ house…either there are too many different sounds or he is too excited to be there.  Since he was so exhausted, I put him to bed a little early last night, at 7:00 p.m., and he woke up at 8:00 a.m. this morning!

More on Keenan’s party: I made it pretty simple with red table cloths (going with the Elmo theme), flowers for centerpieces, a birthday banner (from his 1st birthday), Elmo balloons and Elmo plates and napkins. It was a perfect day, too, not too hot or too windy.

Once everyone arrived, we snacked on my husband’s infamous guacamole and chips (one of Keenan’s favorite foods) and swam. Keenan had fun swimming with his puddle jumper! After some swimming, the kids played with the water table, took rides in the wagon (courtesy of Nonna!) and played on the swing set. The kids were constantly busy playing, it was so fun to watch!

Before dinner, the kids swam a little more, making them all pretty hungry! For dinner, we had grilled chicken, Artichoke Torta, grilled peach spinach salad, fresh blueberries and strawberries, along with some freshly baked ciabatta. It was all very yummy! The kids dined at the little table, while the adults sat at the big table. The kids did a great job of cleaning their plates and once they were finished, they were off to play again!

A little while later, I brought out Keenan’s Elmo cake (Pig-out Carrot Cake), and we all sang Happy Birthday. It was funny, Keenan was afraid of his birthday candles and kept turning his head away (not wanting to look at them). Since he was a little unsure about blowing out his candles, his friends gladly helped him! Since we have talked about the danger of fire, I think Keenan was a little too scared. I hope we didn’t permanently scare him away from blowing out his birthday candles in the future! In addition to cake, my husband made peanut butter chocolate swirl ice cream, so all of the kids had ice cream cones in addition to the cake (LOTS of sugar). Keenan ate Elmo’s eye balls and his ice cream cone first, so he was too full to finish the rest of his piece of cake. Luckily, we have plenty leftover for him to have little pieces for some dessert this week!

As you can see, I decorated Keenan’s cake with m&ms (red and orange), chocolate chips for the mouth and peanut butter cups for the eyes. I definitely learned my lesson; I will not use m&ms again because they immediately started to bleed as soon as I placed them on the cake! Once I put the cake back into the fridge after I finished decorating it, the frosting and m&ms stopped melting, so it wasn’t too bad. But, I was still a little bummed that the cake didn’t turn out exactly as I had hoped. At least the cake tasted good! The cream cheese frosting was perfectly tart and sweet, while the cake was super moist! Below is the recipe:

Pig-Out Carrot Cake:

Ingredients:

– 4 eggs

– 2 cups sugar

– 3 cups flour

– 2 tsp cinnamon

– 1 tsp nutmeg

– 2 tsp baking soda

– 1 tsp salt

– 1 1/2 cup canola or grape seed oil

– 1 tsp vanilla

– 1 8 oz. can crushed pineapple (reserve 1/4 cup of juice for frosting)

– 3 cups grated carrots

1 cup raisins

1 cup chopped walnuts (optional)

Directions:

1. Preheat oven to 350 degrees. Beat eggs and set aside.

2. Mix sugar, flour, cinnamon, nutmeg, baking soda and salt in a large bowl.

3. Make a well in the center of your dry ingredients and pour in oil, vanilla and beaten eggs. Mix.

4. Add crushed pineapple, carrots, raisins and walnuts.

5. Pour into greased 9X13 pan (or prepared cake pans) and bake for 45 minutes to 1 hour, or until knife inserted comes out clean.

Cream Cheese Frosting:

Ingredients:

– 1 cube butter

– 1 8 oz. package cream cheese

– 2 cups sifted powdered sugar (add by taste, instead of all at once)

– 1/4 cup pineapple juice

Directions:

1. Beat  together until well mixed.

2. Spread frosting over cooled cake.

After cake and ice cream cones, the kids played a little more before everyone headed home. For party favors, I gave each family a small bag of kettle corn that I made. All, in all, Keenan’s party was a lot of fun! Everything went smoothly; my husband and I were still able to relax, enjoy everyone’s company, watch Keenan have fun, while getting all of the food ready. It was great day.

Since it was so late after everyone left the party, Keenan opened his birthday gifts on Sunday morning, after we got home from church. He definitely knew how to open his gifts! One exciting gift he got was from Nonna and Avo: a tricycle! The nice thing about this tricycle is it has a removable handle, so we can push him now (since he doesn’t know how to peddle) and once he learns to peddle, you can take it off.

Today, Keenan helped my husband put his new trike together and then we went for his first ride! He was SUPER excited to take it for a ride!

Once Keenan woke up (sleeping for 2 1/2 hours), we headed to CrossFit for a much needed workout, after eating lots of sugar and rich food this weekend. My body sure needed it, but it definitely was not my best WOD. The WOD was a 7 minute AMRAP (as many rounds as possible), doing power cleans (women weight: 115 lbs) and 12 over the box jumps. I started with the prescribed weight of 115 lbs, but once I was on my 4th rep, it took me 5 attempts to get another one, so I decided to go down in weight to 105 lbs (not something I’m happy about). Since I changed the weight, I lost a lot of time, thus I was only to complete 3 rounds and 5 reps. A weakness of mine is “early arm bend” which makes it hard to increase my strength, if I don’t have proper technique. The “early arm bend” is something I have been working on for months, so it is something I need to continue working on…bring on more medicine ball cleans!

For dinner tonight, we had my turkey meatloaf in the crock pot (Mexican style with: cumin, oregano and salsa), roasted sweet potatoes and a salad. I didn’t have enough oats, so I added some flax seed and bread crumbs, thinking it wouldn’t effect the consistency. As soon I scooped the meatloaf out of the crock pot, it fell a part, thus not holding up as it usually is. But, it still tasted good! Since we were so hungry, we inhaled our food before I could take a picture, sorry! What did you make for dinner tonight?

 

Happy Birthday, Keenan! August 21, 2012

Two years ago, today, our lives changed forever. My husband and I welcomed a beautiful baby boy into the world. I can’t believe it has already been two years! It seems like yesterday that we brought him home from the hospital; our little peanut of 6 lbs and 1 oz. Where did the time go? The past two years have been awesome, to say the least! We have thoroughly enjoyed our new roles as parents, even during the sleepless nights when he was first born or the occasional tantrums, now. The silliness, full-belly laughs, smiles, hugs, cuddles, holding his little hands in ours, tickles, conversations, play time, story time and most importantly, watching Keenan grow and develop have been the rewards of being parents. We love each and every moment that we spend with him, and we look forward to many more to come! Happy Birthday to my Sweet Pea, Keenan!

For his birthday festivities, we started the day off with one of Keenan’s favorite breakfasts of waffles spread with peanut butter and honey (except it was with the blueberry honey Grandma gave him for his birthday), along with fresh blueberries and strawberries. After breakfast, we met my parents at Sacramento’s Railroad Museum to show Keenan real “Choo Choo Trains” for the first time, followed by a picnic lunch. Keenan was fascinated by the trains! He kept asking to see more by saying, “More Choo Choo Trains!” He was so mesmerized by all of the trains, that he didn’t want to leave when it was time for lunch!

For lunch, my mom made her famous fried chicken (a family tradition anytime we have a picnic) and beer bread and I made my Grandma Rose’s Artichoke Torta and fruit salad (made with Keenan’s favorite fruits: blueberries, strawberries, banana and peaches). For dessert, we enjoyed Peanut-Butter Swirl Brownies! I put two candles on Keenan’s piece and we sang “Happy Birthday” to him. It was funny, he seemed a little apprehensive about blowing out the candles, but after we helped him blow them out, he devoured his brownie! After dessert, Keenan opened his gifts, which included a Firefighter hat from my parents (and he immediately wanted to wear it).

Once we were all done and got to our car, Keenan fell asleep before we were even out of the parking lot, with his Firefighter hat still on! To make it more comfortable for him, I reached back to take off his hat, which scared him, so he abruptly woke-up and screamed, “Ahh!” We laughed SO hard!! Fortunately, he dropped right back asleep. But, as soon as we got home, as I was transferring him to his crib, he woke-up and didn’t want to go back to sleep. So, it was play time, pretending to be a Firefighter, wearing his new Firefighter hat, along with his boots and jacket (that Nonna bought him a few weeks ago) with his new backpack (that Grandma and Grandpa gave him for his birthday). We read the Firefighter story with all his gear on and he didn’t want the story to end. He wanted to keep reading and reading it!

Keenan was so set on being a “Firefighter” this afternoon that he didn’t want to take his gear off and get dressed to head to the gym. It was like pulling teeth to get him to take everything off. Finally, with a promise that he could wear all of his “Firefigther gear” tomorrow, he agreed to get dressed, so we could go to CrossFit. Today’s workout wasn’t too bad, but still challenging. We did 5 sets of 2 reps of power complexes (power clean, hanging squat clean followed by a squat clean) for the skill. For the WOD, it was 5 rounds of 5 deadlifts (185 lbs for women and 275 lbs for men) and 10 burpees for time. I finished in 4 minutes and 25 seconds, doing the RX women weight! Whohoo!

For dinner tonight, we are having swiss chard, sauteed with a red bell pepper, onion, sun dried tomatoes and Italian sausages, sprinkled with feta cheese. It should be good! Night, night!

Artichoke Torta, YUMMY!

Grandma Rose’s Artichoke Torta (a very special food in my family that my Grandma would only make for special occasions, i.e. birthdays or holidays):

Ingredients:

3 packages frozen artichoke hearts

1 onion

1 cup olive oil

1 cup grated Parmesan cheese

1 cup breadcrumbs

1/2 cup dried parsley

3 cloves garlic (minced)

6 eggs

1/2 tsp Italian seasoning

1/4 tsp salt

1/4 tsp pepper

Directions:

1. Preheat oven to 325 degrees and prepare a 9X13″ glass dish by greasing with olive oil.

2. Boil artichoke hearts, drain and cool.

3. Beat eggs in large mixer. Meanwhile, place onion in food processor and pulse, until finely chopped.

4. Add onion to eggs, along with the rest of the ingredients (except for the artichoke hearts).

5. Place artichoke hearts in food processor and pulse, until roughly chopped.

6. Add artichoke hearts to the rest of the ingredients and mix in mixer on medium speed for a few minutes (until well blended/mixed).

7. Pour mixture into prepared 9X13″ glass dish. Place dabs of butter into each corner and one in the middle.

8. Bake at 325 degrees for 45 minutes. Let cool, cut into squares and enjoy for an appetizer or side dish cold or warm!

Peanut-Butter Swirl Brownies by Martha Stewart (makes 9 large squares): *I followed the recipe exactly. It was probably one of the first times, in a long time, that I didn’t substitute any of the ingredients to make the recipe healthier. Since the brownies were for Keenan’s birthday, I thought I would make the “real deal” (which my husband was excited about!).

Ingredients:

For the Batter:

– 8 tablespoons (1 stick) unsalted butter, cut into small pieces, plus more for pan

– 2 ounces good-quality unsweetened chocolate, coarsely choppe

– 4 ounces good-quality semisweet chocolate, coarsely chopped

– 2/3 cup all-purpose flour

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 3/4 cup granulated sugar

– 3 large eggs

– 2 teaspoons pure vanilla extract

For the Filling:

– 4 tablespoons unsalted butter, melted

– 1/2 cup confectioners’ sugar

– 3/4 cup smooth peanut butter

– 1/4 teaspoon salt

– 1/2 teaspoon pure vanilla extract

Directions:

1. Preheat oven to 325 degrees. Butter an 8-inch square baking pan and line with parchment, allowing a 2-inch overhang. Butter lining (not overhang).

2. Make batter: Put butter and chocolates in a heatproof medium bowl set over a pan of simmering water; stir until melted. Let cool slightly. Whisk together flour, baking powder, and salt in a bowl.

3. Whisk granulated sugar into chocolate mixture. Add eggs, and whisk until mixture is smooth. Stir in vanilla. Add flour mixture; stir until well incorporated.

4. Make filling: Stir together butter, confectioners’ sugar, peanut butter, salt, and vanilla in a bowl until smooth.

5. Pour one-third of batter into prepared pan; spread evenly with a rubber spatula. Drop dollops of peanut butter filling (about 1 tablespoon each) on top of batter, spacing about 1 inch apart. Drizzle remaining batter on top, and gently spread to fill pan. Drop dollops of remaining filling on top. Gently swirl peanut butter filling into batter with a butter knife, running the knife lengthwise and crosswise through layers.

6. Bake until a cake tester inserted into brownies (avoid center and edges) comes out with a few crumbs but is not wet, about 45 minutes. Let cool slightly in pan, about 15 minutes. Lift out; let cool completely on a wire rack before cutting into squares. Brownies can be stored in an airtight container at room temperature up to 3 days.

 

Thanksgiving Weekend + New Pumpkin Recipe! November 27, 2012

I hope everyone had a great holiday and a relaxing long weekend! Despite the septic incident and part of the turkey catching on fire while we scrambled to keep sewage where it belonged, we had a nice Thanksgiving. All of our food was delicious (including the turkey which turned out nice and juicy!).

Since we went to my parents’ house for Thanksgiving, we stayed until Saturday, to spend some time with my parents. Keenan enjoyed playing with Nonna (either inside or outside and “helping” Avo and my husband fix the septic system).

On Friday night, my husband and I met some friends for drinks for a fun double-date! It was nice to have a night out while my parents babysat. On Saturday, we took Keenan to see Santa at Bass Pro Shops, an awesome sporting goods/outdoor shop near my parents’ house. He was SO excited and actually smiled this time (last year he cried!).  In addition to taking a picture with Santa, there are so many things to look at and do at Bass Pro Shops; it is huge! They have a big aquarium of fish, along with lots of different animals. Of course, Keenan enjoyed sitting on the toy four-wheeler, playing all of the kid games and sitting on the “real” four wheelers and buggies, outside. It was also the first time my husband had been there, so being an “outdoorsy guy,” he was like a kid in a candy store!

On Sunday, Keenan helped me put all of our Thanksgiving decorations away and decorate for Christmas, as well as lending a hand to my husband while he put the lights up, outside. But, in the midst of decorating, Keenan fell ill and threw up–twice! We ate Pumpkin Almond Flour Muffins that were leftover in the freezer, but something didn’t sit right in Keenan’s tummy. When I made the muffins the first time a couple of months ago, he also threw up, but I had given him a taste of raw walnut butter, so I thought it was attributed to the butter. Needless to say, I’m not sure what happened yesterday, because my husband and I were fine. We ate the last of those muffins, so I won’t be making them again (or at least giving them to Keenan!). But, after Keenan was done puking, he ate a good lunch (saltine crackers and applesauce), napped well and was back to his usual self by the evening. Since I didn’t have time to go to the grocery store, we used what was in our cupboard and made a delicious pumpkin white bean soup for dinner. Keenan devoured his soup, so I knew he was feeling better!

Speaking of, here is the recipe for my pumpkin soup!

Such a nice (and easy) Fall soup!

Rustic Pumpkin and White Bean Soup: (serves 3-4)

Ingredients:

– 32 oz. can of pumpkin puree

– 1 can of cannelloni beans

– 1 yellow onion (diced)

– 5-6 oz. pre-cooked chicken (chopped)

– 1 cup chicken broth

– 1 tbsp olive oil

– 1 tsp Italian seasoning

– 2 cloves garlic (minced)

– 1 tsp pumpkin pie spice

– 1/4-1/2 tsp ground cumin

– salt and pepper, to taste

– tiny splash, each, of Worcestershire and soy sauces

– 1/4 C spiced, roasted pumpkin seeds

Directions:

1. In a large pot, saute onion, garlic, salter, pepper, herbs and spices in olive oil.

2.Meanwhile, drain and rinse can of beans.

3. Once onions are translucent and herbs and spices smell wonderful, add beans, pumpkin, and chicken broth to pot and cook for 5-20 minutes (you can whip this together, or let the flavors meld).

4. Using an immersion blender, blend soup until smooth. Add sauces. Add more chicken stock if too thick for you. Taste, and add more seasoning if needed.

5. Divide amongst 3 soup bowls and place chopped chicken and pumpkin seeds on top. Enjoy!

*Notes: I added chicken for more protein since this was a one-pot meal for us, but you can serve this without chicken as a starter for a dinner party or as a side. Instead of canned pumpkin, you could use a fresh pumpkin or butternut squash, diced and roasted. Add roasted pumpkin or squash to pot and blend as directed.

Today, my husband and I both woke up with scratchy throats and post nasal drip, so I was dragging all day. My mom was getting over a cold last week, so I’m hoping we didn’t get what she had (keeping my fingers crossed!). Though, my husband made each of us a mini Cafe Bon (minus the Amarula and half the chocolate) since we had some of his whipped cream left over. It was good!

As my husband was adding the whipped cream to our Cafe Bon, Keenan wanted a taste, so as you can see from the pictures, my husband kindly gave him some!

Anyhow, Keenan and I didn’t do too much, except for playing with legos, having some music and piano time. We also managed to go to the grocery store to stock up for the week. After Keenan woke up from his nap, we went to CrossFit and did a short but challenging WOD of max box jumps and 5 snatches every minute on the minute. It felt good to have a workout, especially since I didn’t do much of anything for the past 4 days, due to straining my piriformis and rhomboids (which are still a little sore). I did okay today, but my plan is to train conservative this week (not going to heavy), until everything feels better. My first competition is on Dec. 8th, so I have less than two weeks to prepare. We’ll see how this week goes…

Well, it is time to finally take a shower and work on some Christmas gifts before heading to bed to fight off whatever bug my body seems to be fighting. Have a good night!

Happy Thanksgiving! I hope everyone is having a wonderful day with their loved ones and eating “yummy food” (as Keenan likes to say!). We started our day off on a yummy note with Cafe Bon (thanks to my husband) and pumpkin bread pudding (recipe coming soon!) for breakfast. Keenan was thrilled to have his own little dish of whipped cream to eat (a VERY special treat!). Also, the day started off even better because Keenan slept in until 7:30 a.m.!! He never sleeps in at my parents, so we were all excited! My husband downloaded some “white noise” on his phone and we kept it on all night in his room, as well as talking to Keenan about only waking up when it is light outside. I’m hoping the noise did the trick and he will sleep in the rest of the weekend (keeping my fingers crossed!).

We also enjoyed some thick-cut bacon that my mom prepared (sorry, I forgot to take a picture!). It was the perfect holiday breakfast and morning!

Shortly after breakfast, my mom discovered that their toilets were backing-up, thus the septic system was clogged! Awe…nothing like country living! Luckily, my parents’ were able to get a hold of someone to come out and unclog it (which they are working on as I write this). It just makes for a poopy day (no pun intended!). Fortunately, we aren’t eating our turkey dinner until 5:00 p.m., so we have a little bit of time to de-clog everything, clean the bathrooms and take showers (since we can’t use the bathrooms until everything is fixed). Most of our meal is already prepped, so there isn’t much that we need to do, aside from my husband’s risotto and baking my mom’s famous broccoli casserole.

On the menu for our turkey dinner is: turkey (cooked in the barbecue), broccoli casserole, butternut squash risotto, homemade cranberry sauce, artichoke torta, salad and pumpkin beer bread. For dessert, my mom made an apple crisp and a pumpkin pie. I can’t wait to try everything! I’ll be sure to take pictures and post about our dinner in the next few days.

Today, I am thankful for:

1. My Parents: They do so much for all of us and are always very supportive. They are so generous and give so much to everyone. I love you, Mom and Dad!

2. My Brothers: Though, they both can’t be here with us today (my middle brother lives in Canada) and my oldest brother, Chris, is watching from above. We know you are both with us in spirit. I’m thankful for all of the great memories we have together. We miss you Chris and I can’t wait to visit my middle brother, niece and sister-in-law for Christmas!

3. My husband: I am so thankful to be able to share my life with my best friend. He is a great father, cook and “handyman.” He makes me laugh everyday, and I can’t imagine spending my life with anyone else!

Healthy Holiday Eating Tips + New Pumpkin Recipe! November 20, 2012

Wow, Thanksgiving is only two days away! I can’t wait! Tonight, I’m making Artichoke Torta (our family’s tradition) and getting everything packed to head to my parents’ house tomorrow. Keenan is so excited to go to my parents’ house that he keeps saying, “Go to Nonna and Avo’s house now!” I keep reminding him that we are going tomorrow and not today. He definitely has Thanksgiving down because when I ask him why we are going to Nonna and Avo’s house, he says “Thanksgiving and eat yummy food!” It is too cute!

Speaking of Thanksgiving and all of the delicious food that will be around, it is a great time to re-evaluate your eating habits during the holiday season, check-in on your goals, and have a plan in place to not get off-track. For myself, I look forward to eating all of the tasty goodies that I only get once a year. I allow myself to splurge, having a little bit of everything (though not going overboard). I always try to get some sort of exercise in on Thanksgiving or really push myself the day before, as well as working out the day after. I say “try” because it doesn’t always work out the way I plan, so I just aim to do my best. We usually do something fun as a family the day after Thanksgiving, so I might not have a chance to work out. Either way, I try not to be hard on myself and just plan to get back on track the following day (by then, my body is usually craving my normal routine!).

In preparation for the holiday season, here are a few healthy eating tips that I try to follow:

  • Don’t starve yourself: With a big meal ahead, you might be tempted to eat as little as possible (or nothing) during the day, to save your calories. By not eating, your metabolism actually slow down. In addition, you might feel cranky, irritable and even tired, if your body isn’t consuming its regular calories as it is used to. Instead, eat as you normally do during the day, but a little lighter, saving room for consuming extra calories at your holiday feast.
  • Portions: Since most of the foods at your holiday feast are probably ones you only get once a year, allow yourself a small handful size portion of everything and don’t go back for seconds. By having a taste of everything, you won’t feel guilty or too full! Even if you think you are still hungry, save yourself for a small slice of pie or other dessert. I’m sure that after having dessert your stomach will feel satisfied! We tend to eat with our eyes instead of our stomachs, so having a small portion of everything will be enough.
  • Leftovers: I love Thanksgiving leftovers because you can do so much with them! When you think you need a second helping of your grandma’s casserole or mashed potatoes, think about saving it for the next day. This way, you get to enjoy your “once a year goodies” again the next day (without stuffing yourself the day of your feast). Change up the form, like turning mashed potatoes into potato pancakes with some turkey and cranberries. Or, chop leftover turkey into small pieces and add to a salad for lunch the next day.
  • Exercise: Keep moving! Plan your exercise accordingly. If you don’t have time to fit in a workout on the holiday or the day after, do as much as you can on the days leading up to it. I try to workout extra hard on the few days leading up to Thanksgiving and Christmas, as well as plan some time on the days after to workout (to make up for all of the calories I consumed!). If it means involving your family in your exercise, do it (what a great way to model healthy behavior!)! Go for a jog with your little one in the BOB stroller, a long family walk, ice skating, sledding or snow skiing! Most importantly, stay as active as you can during the holiday season, making sure to not miss a workout no matter how many things you have to do. The more you move, the more you will be able to stay fit throughout the holiday season and not gain those extra pounds!
  • Maintain: If you have been working on weight or body fat loss the past few months, change your focus to just maintaining during the holidays. With all of the tempting goodies, it is hard to eat healthy 100% of the time. Take off some of the pressure and allow yourself to taste everything (a small handful size portion), without depriving yourself. But, keep things in check so you don’t go overboard. Be mindful of how your clothes fit and how you feel to make sure you don’t get completely off-track.
  • Being Mindful: Take the time to truly savor each bite of the scrumptious food you will be eating. Listen to your body and know when you are full. Enjoy and cherish the time you are spending with your loved ones, appreciating each and every moment. Sometimes we get in “rush mode” (as I like to call it), due to the craziness of life and we forget to slow down during the holidays, taking the time to appreciate the important things in our life like family.
  • Don’t Beat Yourself Up: If all else fails and you indulge in a little too much pumpkin pie, egg nog, gingerbread or stuffing, don’t be too hard on yourself. Get back on track the next day with your healthy eating and exercising. One day isn’t going to destroy all that you have worked hard for!

Well, today was another “semi-lazy” day at home. We were going to meet some friends at the park, but Keenan woke up late (8:05 a.m.!) and after eating breakfast, preparing tonight’s dinner (another new recipe, coming soon!), cleaning out Keenan’s closet and battling an eye infection (…from trying a new eyeliner on Sunday. Ugh, my eyes are just too sensitive!), we both were not motivated to leave the house. Instead, we had some good play-time of making soup in his kitchen, racing his cars, dancing and riding his trike. By the time Keenan went down for his nap, he was pretty tired! It was a great morning!

After Keenan went down for his nap, I headed to the box to do some extra work of kettlebell swings, snatches, GHD (glute hamstring developer), double unders and bench presses. Once he wakes up from his nap, we’ll head to the box to do today’s WOD of burpee box jumps, deadlifts and double unders (which I’m not looking forward to!).

Before I forget, here is my new recipe for pumpkin muffins. After searching the internet for new pumpkin ideas, I came across a couple of recipes for pumpkin pie muffins, so I experimented and came up with my Paleo-friendly ones!

Healthy pumpkin goodness!

Paleo Pumpkin Pie Muffins (makes 8 muffins):

Ingredients:
Muffins:
– 2 cups almond flour
– 1 tbsp baking powder
–  1/2 cup xylitol
– 1 tsp raw honey
– 1 tsp vanilla extract
– 2 tsp pumpkin pie spice
– 1/2 tsp cinnamon
– 1 scoop vanilla protein powder
– pinch of salt
1 cup pumpkin
2 tbsp applesauce
2 eggs
1/4 cup any milk
1/4 cup coconut oil
Filling:
1/2 cup pumpkin
2 tbsp xylitol
2 tbsp applesauce
1 tbsp coconut oil
– pinch of salt
Directions:
1. Preheat oven to 400 degrees.
2. Meanwhile, mix all of the dry ingredients of the muffins together in a large bowl.
3. In a separate (small) bowl, mix the wet ingredients.
4. Mix the wet ingredients into the dry ingredients until well combined. Set aside.
5. Prep a muffin tin by spraying it with cooking spray.
6. Mix all ingredients of the filling in a small bowl.
7. Add a scoop of the muffin batter into each muffin tin (leaving enough to cover the filling).
8. Next, add a scoop of the filling on top of the muffin batter, followed by another scoop of the batter (so the filling is in the middle).
9. Bake for 20-25 minutes (or until a toothpick comes out clean). Enjoy!
*Notes: If you don’t have Xylitol (or don’t want to use it), you can sub it for more raw honey!

Friday Favorites! November 16, 2012

TGIF!! I don’t know about you, but I am ready for the weekend, especially since it is suppose to me cold and rainy here in Sacramento! Even though we have errands to run and things to get done around the house, it will be nice to have an excuse to cuddle up on the couch with a warm cup of hot chocolate. It is also crazy (and exciting) that Thanksgiving is less than a week away! Is it just me, or has this year flown by?

I’m also looking forward to a date night tomorrow night, thanks to an anniversary gift from my parents. We are going to dinner and then seeing the show, “I Love You, You’re Perfect, Now Change” at the Cosmopolitan Cabaret. It should be a fun night! Tonight, we are having an “at home date night,” making a roasted cauliflower salad with Gruyere cheese, bacon, roasted pine nuts and arugula, along with a bottle of wine that we bought last weekend after Keenan goes to bed. We have a lot of shows to catch-up on, so I think we will be having a TV marathon after dinner!

Before I talk about my “Friday Favorites” for this week, I want to tell you how my coaching went last night. I coached the CrossFit beginner’s class again and it was SO much better than last week! There were only 8 people, so that made a huge difference, but overall, I felt more confident and more of myself. I was able to loosen-up, be louder, make people laugh and remember everyone’s names from last week. I had a blast coaching and I can’t wait to do it again! Speaking of, my coach asked me to coach the weekend class tomorrow morning, since his wife is in a competition all day in the bay area. It should be fun, and another great opportunity to practice my coaching!

Now, onto “Friday Favorites!” If you missed my post from a few weeks ago, I decided to start a new theme for my Friday’s posts. Every Friday, I plan to reflect back on my favorite moments and eats from the past week, as part of my new focus of living more in the present and cherishing each and every moment.

Favorite Moments:

  • Doing arts and crafts with Keenan yesterday: making a turkey using his hand cut-outs and hand prints!
  • Having our “morning family snuggle time” in our bed reading stories with Keenan.
  • Having breakfast with my favorite silly guy!
  • Coaching the CrossFit beginner’s class last night.

Favorite Eats:

  • Egg whites in a Mug over a bed of spinach with avocado, tomato, roasted pumpkin seeds and salsa or pasta sauce (another thing I just can’t stop eating!).

A Tough Tuesday and An Easy Crock Pot Recipe! November 14, 2012

Well, today was just one of those days! This morning, while I was making breakfast, Keenan was “helping” me make coffee and as I was getting ready to put the coffee in the French Press, it tipped over and broke into a hundred pieces! Glass was EVERYWHERE and Keenan and I were in the middle of it (not a good situation!). Keenan started crying and all I could think of was making sure he wasn’t cut and cleaning up the glass. Luckily, Keenan was fine and I was able to clean everything up. But, we were extremely late for our play date with our friends in Roseville, Giselle from A Healthy Happy Home and her cute little guy, Ayden.

Once we met up with our friends, we had a great time! Giselle is so sweet and her little guy is adorable. We walked through the farmer’s market, played a bit and even went on a little train ride (which Keenan absolutely loved!). As we got closer to lunch time, Keenan was getting tired and cranky, so we headed to Whole Foods to pick up a quick bite to eat before heading home. As we were getting food, Keenan was so tired that at first he wanted something and then he didn’t, getting more and more cranky. So, I got something quickly for him and we ate outside before getting in the car to drive home. Since he was so tired, he ate very slowly and took forever to swallow his food. I kept telling him to swallow, but  he just kept his food in his mouth for the longest time!

As I expected, Keenan fell asleep as soon we drove out of the parking lot. Thinking that he would transfer well (he usually does), I transferred him to his crib, but after a few minutes, he woke up and didn’t go back to sleep. I let him sit in his crib (in hopes he would fall back asleep), but it didn’t help. He kept talking to his animals and then eventually calling for me. Needless to say, today wasn’t the best! I definitely don’t feel like I’ve earned the “best mom” award. I can’t help but feel bad about the whole day: broken glass everywhere, staying out too late this morning, thus causing Keenan to act out in frustration, and keeping him in his crib in hopes of him falling back asleep while I got some work done. The lesson learned is I need to learn to take a step back and reevaluate the situation and let things go. I also need to not worry about getting “everything done,” and just appreciate these moments (good or bad), because they go by so quickly.

Well, on another note, I survived yesterday’s extremely challenging WOD, “Murph“, yesterday. I finished in 49minutes and 24 seconds! I was SO relieved when it was over! I have to say that was one of the most mentally challenging WODs I have done. It was  hard to stay focused when there were so many reps to do! At least today’s workout wasn’t too bad. We had a small WOD of 15 hang clean and jerks of 65 lb and 15 box jumps, completing as many rounds as possible in 10 minutes. It was a nice change from yesterday! In addition, I did 100 burpees after class, as extra work our coach is having us do in preparation for our upcoming competitions (and for being a few minutes late…).

Before I forget, tonight we made Kabocha squash for the first time! We quartered it, added spices and roasted it in the oven for 45 minutes. When it was ready to eat, we just scooped it out with a spoon. It was really good! I’ll definitely be buying it again!

So yummy!

To go along with it, I made pork with apples and onions in the crock pot, a recipe I found online. It was good, though a little too acidic. I accidentally added too much apple cider vinegar. With a little less vinegar, it would be much better. Here is the recipe. It is super easy, since you throw in frozen pork chops or country style ribs!

Good (though it doesn’t look that great)!

Crock Pot Pork and Apples: (serves 2-3)

Adapted from Frugal Foodie Mama

Ingredients:
– 2-3 pork chops or boneless country pork ribs (frozen)
– 1 medium red onion, chopped
– 2 medium apples (any kind), cored and chopped
– 1/4 cup apple butter
– 1/4 cup apple cider vinegar
– 1 1/2 tbsp whole grain Dijon mustard
– 1 tsp salt
– 1 tsp pepper
– 1/2 cup apple sauce
Directions:
1. Mix apple butter, vinegar, mustard, apple sauce, salt and pepper together in a small bowl.
2. Place apples and onions at the bottom of the crock pot.
3. Place pork on top of the apples and onions.
4. Top with mustard mixture, cover and cook on low for 6-8 hours.
After a day like today, it is time for a much needed hot shower and heading to bed early. Have a good night!

Friday Favorites and Fitblogger! November 9, 2012

Happy Friday! Are you one of the lucky ones who has Monday off in honor of Veteran’s Day?

I’m SO excited it is Friday because we have some fun things planned for the weekend and today is my feature post for Fitblogger!! If you haven’t checked it out, you can see my post here. As for the weekend, we are doing a little more celebrating for my birthday, starting with tomorrow at my in-laws. My mother-in-law is making a special brunch for my birthday with the most yummiest beverage ever, Cafe Bon, a mocha mixed with Amarula (a liquor similar to Kahlua) with homemade whipped cream! I can’t wait! On Sunday, we are going wine tasting in Amador County with some friends. My husband is planning it, so I’m not sure what all he has planned; it should be fun!

Tonight, we are going to have an “at home date night” after Keenan goes to bed, catching-up on our favorite TV shows that we missed during the week. I’m not sure what we are having for dinner: either stuffed bell peppers (since I have a couple that need to be used) or something with sweet potatoes. We’ll see…

This morning, I went to the box to do some skill work of cleans, squat cleans and split jerks. We are heading back to the box this afternoon for the WOD. My shoulders are definitely feeling it from this morning, so this afternoon shall be interesting! At least I have two days off!

Friday Favorites November 2, 2012

TGIF!! I’m SO excited for this afternoon and weekend! My husband and I have a date night planned for tonight that includes a couples massage (thanks to Groupon!) and dinner afterwards. Keenan is staying with my parents for the night, whoohoo! Tomorrow afternoon, we are heading to my parents to stay the night and on Sunday, my mom and I are having a “girls day” at the spa at Wine and Roses in Lodi for my birthday (my birthday is on Sunday and I still can’t believe I will be 31!). It should be a lot of fun, and I can’t wait for some MUCH NEEDED pampering and relaxation!!

Since it is Friday, it is time for “Friday Favorites!” If you didn’t see last week’s post, I decided to start a new theme for my Friday’s posts. Every Friday, I plan to reflect back on my favorite moments and eats from the past week, as part of my new focus of living more in the present and cherishing each and every moment (living more the Alaska way).

Favorite Moments:

  • Trick-or-treating with Keenan and seeing him so excited and happy!
  • Keenan and my mom playing together and being silly!
  • My husband and Keenan playing the guitar together!
  • Playing with Keenan in his sandbox and cuddling with Slinky!
  • Keenan and I creating our own version of “Rockabye Baby,” except calling it “Rockabye Potty” and turning it into a potty song for potty training!

  • Popcorn!

After looking back at this week’s eats, I definitely need to try a few new things next week. My favorite eats from last week were pretty much the same this week (but they were SO good!).  🙂

Since our massage appointments are later this afternoon, I need to keep today’s post short, so I can finish up a few things and take a shower. I went to CrossFit this morning and got a great circuit workout in of medicine ball cleans, rope climbs, GHD sit-ups, push presses (55 lb), over-the-box jumps and sumo deadlift high pulls of 50 lbs. We did 1 minute at each station (doing as many reps as you could in that minute) for 3 rounds. The left side of my lower back is still sore, so I’m looking forward to my massage later! Tomorrow, everyone who is competing in the next few weeks is meeting up to do a couple of WODs. I want to go, but I’m going to see how my back feels in the morning.
